Great Goat Cheeses of the World (2 Pound) by igourmet.com

By: igourmet
Our price:

  • A collection of goat cheeses from around the world
  • Ibores, Buche de Chevre, Cornelia, Goat Cheddar by Cypress Grove
  • Each cheese is an 8 ounce package
  • Makes a great gift
  • Please note that any item temporarily out of stock will be substituted with a similar item of equal value

Product Description

People are drawn to the vibrant, tangy flavors found only in goat cheese. Great goat cheeses capture the essence of their native pastures and often exhibit fresh flavors such as of thyme, tarragon, rosemary, lemongrass and pine. Their ease of digestion, particularly for the lactose intolerant among us, is another reason for the popularity of goat cheese. For many however, goat cheese remains misunderstood. A persistent victim of "milk-prejudice," it is our goal to bring goat cheese to the masses. Our Great Goat Cheese Assortment includes a selection of cheeses from four distinct countries: Majorero (Spain): From the beautiful island of Feurteventura in the Canary Islands, Majorero possesses a lively acidity and a slight piquancy on the palate. It is creamy with a mouth-watering, long-lasting flavor, full of rosemary and pepper. Buche de Chevre (France): This wonderful goat's milk cheese from Poitou in the Loire Valley is aged for two months, during which time it develops a hard, edible crust complete with a bloomy white mold coating. It is sharp and tangy near the rind and gets progressively richer and creamier toward the center. Cornelia (Holland): Cornelia is made from a single herd of goats that graze on pastures of natural grasses and wild herbs. This old-world style of raising goats yields a remarkably flavorful milk that gives Cornelia an abundance of character. Capradoro (Italy): Sardoformaggi (established in 1963) gets its milk for Capradoro from Sardinia's beautiful hilly interior where rosemary, sage, myrtle and juniper grow wild. This aged goat's milk cheese has a hard flaky texture and a flavor with incredible floral notes and a refreshing lemony tang. Please note that any item temporarily out of stock will be substituted with a similar item of equal value or greater value.

  • Great with toasted walnuts
  • Makes a striking presentation on the cheese tray

As Americans have developed a deeper appreciation for great cheese, a change in American cheese making has occurred. Across the country, small-scale dairy farmers and cheese makers are making wonderful cheeses to rival those of Europe. One of these cheeses is Humboldt Fog. With a central layer and outer covering of ash, this goats milk tome ripens with a soft, white interior. When cut, it is reminiscent of the early morning fog. Humboldt Fog is made by Cypress Grove Chevre, which is owned and operated by mother and daughter team, Mary Keehn and Malorie McCurdy, in Humboldt County, California, among the towering redwood trees. These amazing women have an enviable passion for their work that has been rewarded by national award, reputation, and a steadily growing business. American farmstead cheeses often command a hefty price due to their limited production, but one bite will convince you that the luxury is worth the cost. Crottin de Champcol (2 Ounce) by igourmet.com

By: igourmet
Our price:

Product Description

If you love a rich and creamy French goat's milk cheese, this button-shaped goat cheese is truly special. From Sancerre in the Loire region, Crottin de Champcol, a pasteurized version of Crottin de Chavignol AOC, has a natural rind which ranges from pale ivory to light brown. These color gradations demonstrate how the cheese is delicious at every stage of its aging. After eight days of life it is ready to be eaten, having a gentle, aromatic, yeasty taste and a fine, moist texture. At this point Crottin weighs about 140g. After two weeks, the interior softens, the taste is nuttier and full bodied and is weighing in at 110g. After about 20 days, the cheese will change again into a fruitier, denser and creamier cheese. After five weeks, the cheese is dry and has really shrunk! The smell gets stronger and develops a meaty texture and a robust flavor. After four months, just grate off the rind that has formed. By this time the rind will be blue-gray and looks most like its literal translation, "horse droppings". By this time the cheese will have reduced to a mere 40g. Crottin de Champcol is rich and varied at every stage and it is a pleasure to enjoy the complexities of this cheese. Crottin is very popular grilled, making the base of a chevre salad. This is also a great table cheese. Use this cheese differently according to its age, from baking to salads, it will never quite be the same, but always scrumptious.

Cabra Pimentao

By: Gourmet Food Store
Our price:

Product Description

This Portuguese cheese brought to mind the Spanish Toledo and Pimentino cheese, if they had aged and became quite the characters. All these cheeses are rubbed with paprika to aquire that distinct color in the rind, but Cabra Pimentao is made exclusively of goat's milk, and aged longer for a more rugged texture and more complex flavor. The rind is beautifully colored by the paprika, however the cheese itself is not spicy, but fairly smooth in flavor with a firm texture. Cabra Pimentao is also rubbed in olive oil that helps delivery a buttery finish on the tongue. Packaged in a rustic wooden crate.

Caprino all'Erbe Cipollina (approx. 6 oz. each)

By: La Caperia
Our price:

  • A most seductive organic caprino from the Veneto
  • La Caperia is the smallest, most artisanal cheese producer we work with

Product Description

In a tiny, one-room dairy in the dense, green hills outside Executive Chef Gianluca Guglielmi's hometown of Vicenza, Enrico Grandis, his wife, daughter and son create the finest organic goat's milk cheeses we've tasted. Working with only two kettles in their small dairy, production is extremely limited. Grandis believes the quality of his cheeses begins with naturally fed goats. He maintains a heard of 200 goats, all of them born and raised on a diet of grass and flowers on his property. We import five cheeses directly from Enrico and are the only retailer on the west coast to sell them.

Enrico's Grandis' most seductive and savory cheese is this delicate caprino, made with fresh organic chives handpicked on his property. The harmonious pairing of young goat's milk cheese and chive bursts sweetly on the palate and, thankfully, lingers long after.
