Denhay has 1000 Friesian Holstein cows in five herds, selected for the high protein quality of their milk. Their welfare is independently audited by the RSPCA's Freedom Foods scheme. In summer they go out to graze the grass in the fields. In winter when the ground is too wet and cold, they are kept indoors and fed on a diet of grass and maize silage, supplemented with cereals - mainly wheat and soya. While inside, every cow has a mattress on which to lie. All the milk produced by the Denhay herds is used to make West Country Farmhouse Cheddar, and the cream, from the by-product whey, is used to make whey butter. Denhay is unique as a Cheesemaker in that we have one person responsible for everything from the breeding, feeding and welfare of the cows to the making, maturing and grading of the cheese: Simon Hill, the Denhay Farms Director has that role. A first independent grading will take place at three months to ascertain the quality of the cheese in terms of colour, texture, smell and taste. Denhay Cheddar is carefully matured and monitored until it is 11 months old when it is sold as premium West Country Farmhouse Cheddar.

Berkswell sheep's milk cheese is handmade at 16th Century Ram Hall, situated on the edge of Berkswell village from where the cheese takes its name. Berkswell is five miles west of Coventry in England. This unpasteurized, hard cheese was developed from a traditional Caerphilly recipe, but adapted and matured for four to eight months to give it unique texture and flavor. Berkswell is close textured and has been described as 'silky', full, rich and sweet in flavor. It is frequently compared favorably with a mature Pecorino. The cheese is hard and chewy, almost granular. Blue Stilton of just Stilton is England's only name-protected cheese. The name-control law stipulates that the cheese can only be manufactured in a specific area with milk from that area. Recipe and aging guidelines are laid down by the Stilton Cheese Makers' Association. The finished product is however not controlled and therefore Stilton's of various qualities can be found. The interior of our high quality Blue Stilton is crumbly when young, softening and darkening at the rind as it matures. It is a lovely creamy ivory color with well-spread blue veining growing from the center outward. The aroma is sharply nutty and the flavor is full of mellow nuts and fruit. The flavor strengthens as it matures. Blue Stilton cheeses are drum shaped with a thick, hard, uncracked crust which is usually grayish-brown and slightly wrinkled with whitish powdery patches. Blue Stilton is a versatile and easy to use ingredient in a variety of starters and main courses - a little goes a long way. Blue Stilton is best served at room temperature and is a must for any gourmet cheese board. We cut and wrap the Blue Stilton in wedges of 8-ounces and 1 pound.
