Nowadays, a rainbow of wax colors is used across the quality spectrum. Some of the more traditional producers have maintained the tradition of coding quality by wax color, one of which is England's Tuxford & Tebbutt. Tuxford & Tebbutt Creamery, dating back to 1780, is located in the small market town of Melton Mowbray in Leicestershire, England. The Tuxford & Tebbutt Creamery stands externally unchanged in appearance since its construction in the 18th century. The name originates from the company's two original owners, Mr. Tuxford (the Stilton man) and Mr. Tebbutt (the pork pie man). Up until 1965, both cheese and pork pies were made on the same site. However since 1966, Tuxford & Tebbutt has focused solely on cheesemaking. T & Ts Black Wax Mature Cheddar is a classic, tangy cheddar, ideal for baked potatoes, salads, snacks and cooking. Berkswell sheep's milk cheese is hand made at 16th Century Ram Hall, situated on the edge of Berkswell village from where the cheese takes its name. Berkswell is 5 miles west of Coventry in England. This unpasteurized, hard cheese, was developed from a traditional Caerphilly recipe, but adapted and matured for 4-8 months to give it unique texture and flavor. Berkswell is close textured and has been described as 'silky', full, rich and sweet in flavor. It is frequently compared favorably with a mature Pecorino. The cheese is hard and chewy, almost granular. Each bite reveals more of its complex flavors - roasted nuts, caramelized onions and meadow flowers with prickly tang.It can be enjoyed on the cheese board or for grating and also in soups. Made in Manchester since 1881, Duerr's has built its reputation on starting with high-quality fruit and careful, small-batch preparation. In 1872, Fred Duerr married Mary Eva Naylor, an aspiring home canner. In her small kitchen in Heywood, north Manchester, Mary made jams and marmalades for her husband, family and friends to enjoy. In 1881, Fred met the buyer from the Heywood Co-operative Society, who was experiencing difficulty obtaining jams of high quality. The buyer had heard of Mary's jams, and asked if Fred would consider supplying his society. From that chance meeting the family business was born. In 1890, Duerr's manufacturing levels outgrew their original premises, and Fred commissioned a purpose built factory on Prestage Street, Old Trafford, the site the company still occupies today. England's oldest-known cheese, it is reddish-orange in color and has a slightly tangy flavor. (1/2 lb.) Crumbly Lancashire: This ancient cheese, like many other British classics, is dry and crumbly. Made from rich, full-fat cow's milk, it is a mild, fresh-tasting cheese that is one of England's best kept secrets. (1/2 lb.) Mature English Cheddar by Coombe Farm: This authentic English Cheddar is produced on Coombe Farm in Somerset. It is made from rich, local milk and aged for over 12 months. The result is a great cheddar that is sharp, nutty and not overly dry. (1/2 lb.) Chutney for Cheeses is made with prunes, apricots, dates and mixed spices stewed with onions and sugar. Denhay has 1000 Friesian Holstein cows in five herds, selected for the high protein quality of their milk. Their welfare is independently audited by the RSPCA's Freedom Foods scheme. In summer they go out to graze the grass in the fields. In winter when the ground is too wet and cold, they are kept indoors and fed on a diet of grass and maize silage, supplemented with cereals - mainly wheat and soya. While inside, every cow has a mattress on which to lie. All the milk produced by the Denhay herds is used to make West Country Farmhouse Cheddar, and the cream, from the by-product whey, is used to make whey butter. Denhay is unique as a Cheesemaker in that we have one person responsible for everything from the breeding, feeding and welfare of the cows to the making, maturing and grading of the cheese: Simon Hill, the Denhay Farms Director has that role. A first independent grading will take place at three months to ascertain the quality of the cheese in terms of colour, texture, smell and taste. Denhay Cheddar is carefully matured and monitored until it is 11 months old when it is sold as premium West Country Farmhouse Cheddar.
