In modern Holland, there are few remaining farmers who still make cheese by hand on the farm. Boerenkaas is, by definition, a handmade Gouda. Creating Boerenkaas is more art than science, leveraging a tremendous amount of knowledge, tradition and skill in the process. Our Boerenkaas is only made from May to October when the weather permits the cows to stay outside and eat fresh grass. Because it is made from raw milk, this cheese has a full, tangy flavor, with much more character than any factory-made Gouda cheese could possibly match. Product Description
The Beemster Cheeses come from the quiet, canal-lined pastures of North Holland. This remarkable landscape, located 20ft below sea level, was reclaimed from the sea in the year 1612. In search of more pastures farmers moved north and found a lagoon stretching into the sea. Using dykes and 106 windmills this area, referred to as a Polder, was drained and soon became inhabited by farmers and their herds. When farmers began to till the soil, they discovered blue sea-clay, which had been at the bottom of the lagoon for millions of years. Pastures thrived in this newly-found soil and cows loved grazing on the lush grasses. It soon became known throughout The Netherlands that the best milk came from the Beemster Polder. To preserve their much sought-after milk, they formed a cheese cooperative in 1901. Today Beemster is crafted using the original techniques employed by the founders of the co-op. The Master Cheesemakers that create Beemster Cheeses all are local residents in the polder and have inherited generations of experience in crafting cheese. The Beemster recipe still remains a closely guarded secret that has been handed down since 1901. Their latest cheese uses their classic recipe with the addition of cumin. Spices such as cumin, caraway, and cloves are fixtures in Dutch cuisine, the most well-known cheese being Leyden (with cumin or caraway). Beemsters version is more aged than traditional Leyden, and with their spectacular milk as a base, the result is better than other commercial spiced cheeses from Holland. A glass of fine ale makes a fine complement to this savory gouda. Made from pasteurized cow's milk. Photo depicts 24 lb. wheel, we cut and wrap this cheese by the pound. This is the only cheese to receive the Appointment to the Royal Court of The Netherlands.

The geographical region encompassing the former country of Flanders contains two Belgian provinces, present-day Nord (France), and the southern part of Zeeland (Holland) known as Zeeuws-Vlaanderen ("Sealandic Flanders"). This area is very well known for flax, a useful flowering plant that grows wild throughout Europe, but is especially abundant in Flanders. Famous throughout history, flax was used by the ancient Egyptian and Roman civilizations to make paper and linen. Today it is still used to make linseed oil and printing ink. The recipe for this cheese from Zeeuws-Vlaanderen dates back many centuries. Its name means "Flax Cheese", owing not to an ingredient but to the plant that dominates the local countryside. Still made in an old-fashioned manner, in the Middle Ages it was quite popular and always served at the annual oogstfeest (Flemish harvest festival). Similar to Gouda but richer, creamier and deeper yellow in color, Vlaskaas' purple rind distinguishes it from all other cheeses. Gold medal winner at the 2004 World Championship Cheese Contest

A cheese that requires three adjectives to describe it had better be something special. Well, we nearly died of delight when we first sampled this remarkable cheese. In our minds, the chance that any cheese could be even more flavorful than our 18-month Aged Gouda was remote. But this one pulled it off! The first thing we noticed about our new 36-month Gouda was that its texture was crumbly, like that of Parmigiano Reggiano or Grana Padano. Then we tasted it, and WOW! was it packed with flavor. Butterscotch immediately came to mind, followed by alternating waves of whiskey and pecan. All this from a product with three basic ingredients: milk, salt and, most importantly, time.

Long known and respected for its chocolates, Belgium is also a great cheese country. It is said that, despite its small size, Belgium produces as many distinct types of cheese as does France. Many of its 300+ varieties are made in very small quantities and are not exported out of the country. The examples we do get, however, are quite impressive. This unique assortment includes three of our favorites: Passendale: A semi-soft cow's milk cheese with a delicious flavor and sweet bouquet. It will not offend those with basic tastes, yet will still wow the gourmets. This semi-soft variety is a little bit sweet, quite creamy, golden on the inside with small holes beneath a hard but edible rind. Raphael: Made by the friars of the Postel Abbey, Raphael is one of their new creations. Named after the angel Raphael, this "real Abbeycheese" is a washed rind variety aged about 8 weeks. It has a lovely, creamy flavor and a very smooth texture. Old Postel: Also from the Trappist monks of the Postel Abbey, Old Postel has a firm texture, a pleasing aroma, and a slightly salty flavor. It is aged for over 12 months and is therefore fairly dry and hard enough to grate. In addition to its rich nutty flavor, Postel has slight hints of various spices, such as clove and nutmeg.
