We're happy to introduce this North Holland Dutch Gouda with some new flavorful twists. Beemster has enhanced traditional Gouda with delicious spices and herbs. Some tastes are more familiar to American palates (garlic, fine herbs, and black pepper) whereas others (mustard and nettles) are delicious changes of pace. In Holland, people often spread mustard on mild cheeses to liven them up. Celebrating this tradition, Beemster with Mustard uses whole mustard seeds in its cheese. Beemster with Nettles may also be worthy of explanation. In Europe, nettles (wild herbs) are used to flavor everything from cheese to pasta sauce. Reypenaer V.S.O.P. is truly a Dutch gourmet cheese showpiece. Magnificent and well deserved of the V.S.O.P. designation. This delicious gourmet cheese from the Netherlands is matured for about 2 years and during that maturation sheds approximately 25% of its original weight. The white spots you will see on the surface indicate the start of mineral and protein crystallization. In comparison to most cheeses that are aged from a few weeks to a few months, this is a masterpiece long in the making. We also have a Reypenaer, aged for just 1 year and already tasting 'old' and the oldest of the bunch a Reypenaer XO Reserve which is aged 3 years. Aroma and flavor are superb. Sharp and tangy. This smoked cheese comes from Mragowo, the northeastern-most part of Poland, home to the Mazurian Lake district. A longtime summer resort area for well-to-do Poles, Mragowo is also noted for its lush farms and robust dairy production. Damski, which is naturally smoked over wood embers, is a semi-soft variety with a pleasant, sweet flavor combined with the typical qualities of any smoked cheese. Its burnt rind and smoky aroma make it one of our favorite specialties from Poland.

Over twenty years ago, we had a request from the man who originated "The Cellar" at Macy's. "I want the Dutch Goat cheese I tasted when I was in Holland," he said. We took a trip to Amsterdam and inquired on his behalf to all of our suppliers and any cheese producers we could find. We had no success. There was not an ounce of Dutch goat cheese anywhere! Two decades since that adventure, Dutch goat cheese is still a rarity, except, that is, for Goat Gouda. A few entrepreneurial Dutchmen discovered that Gouda, the cheese people most commonly associate with Holland, could be made from goat's milk as well. Goat Gouda has proven wildly popular in Europe and is starting to turn heads here in the States, too. This satiny, bright white cheese is now manufactured by several Dutch cheese producers, but in our opinion, our Chevre Blanc brand is the best Goat Gouda around. If you like goat cheese, we strongly suggest you try this tangy, satiny, mouth-watering gem.

The cheese market in Holland is changing rapidly. For years, Holland was known for Gouda and Edam, two simple cheeses that appeal to the masses. But as tastes have moved upscale, the popularity of Gouda and Edam has waned. With almost every cheese plant in Holland geared up for the production of these two cheeses, a gap between supply and demand threatened to put the smaller cheesemakers out of business. While many got bought out by larger competitors, several shifted their strategy to new and inventive specialty cheeses. Since the mid 1990's, many new cheeses have been developed in Holland. Rouveen, the maker of this cheese, is one of the pioneers of the specialty movement.

We admit - we had to try it to believe it. Our Gouda supplier told us that their Light Gouda tasted just as good as a typical full-fat variety, and it is true! This Gouda, with 30% less fat than the traditional recipe, does not taste waxy, cardboard-like, or have any other deficiency we've associated with light cheeses in the past. On our last trip to Holland, one of our Dutch suppliers informed us that Holland is the one of the most densely populated countries in Europe. This fact, combined with the fact that thirty percent of the land in The Netherlands is under sea-level, makes organic agriculture particularly vital for this country, considering that traditional agriculture is one of the biggest polluters of inland waterways. This cheese is very similar to our Farmer Gouda in type, age, and flavor. It is, however, made from organic milk, sourced from cows that are not given any antibiotics, hormones, or growth factors. They graze on fields and eat grains that have not been treated with chemical fertilizers, herbicides, or pesticides. The natural goodness of the Dutch countryside shines through in the resulting cheese.

The geographical region encompassing the former country of Flanders contains two Belgian provinces, present-day Nord (France), and the southern part of Zeeland (Holland) known as Zeeuws-Vlaanderen ("Sealandic Flanders"). This area is very well known for flax, a useful flowering plant that grows wild throughout Europe, but is especially abundant in Flanders. Famous throughout history, flax was used by the ancient Egyptian and Roman civilizations to make paper and linen. Today it is still used to make linseed oil and printing ink.

The recipe for this cheese from Zeeuws-Vlaanderen dates back many centuries. Its name means "Flax Cheese", owing not to an ingredient but to the plant that dominates the local countryside. Still made in an old-fashioned manner, in the Middle Ages it was quite popular and always served at the annual oogstfeest (Flemish harvest festival). Similar to Gouda but richer, creamier and deeper yellow in color, Vlaskaas' purple rind distinguishes it from all other cheeses.

Also known as "King Christian," this Danish specialty cheese is made from partially skimmed cow's milk and is flavored with caraway seeds. This addition gives Danbo a warm, familiar taste, reminiscent of rye bread. Similar in concept to Dutch Leyden, although with a springier texture, Danbo is a festive cheese that is always a hit at parties. It partners very well with beer and wine, especially when served with dark breads, such as pumpernickel.

The Dutch have been producing hand-made farmhouse Goudas for many centuries. Gouda is the most famous of Dutch cheeses and is made from whole milk only. This semi-soft cheese has a creamy, yellow body with irregular holes and a natural yellow rind. For export, Goudas are always coated in red wax.
