Made from a centuries-old recipe, 70-pound wheels of Gruyere de Comté (Comté, for short) have been produced since the reign of Charlemagne, when there were no separate entities named France and Switzerland. Although Swiss Gruyere may be better known, the French variety is no less special. Created by local villagers in alpine dairies called "Fruiteries", its milk comes only from Montbeliarde and Tachete de L'est cows. Contributing to Comté's unique flavor, morning and evening milkings are mingled before the cheesemaking process. The wheels are aged for six months, resulting in a sweet and nutty masterpiece with less bite than its twin from Switzerland. Comté has a satiny, ivory-colored body and a scattering of holes the size of a hazlenut. This cheese comes to us from Emmi, master cheesemakers since 1782. They buy full 200 pound of Gruyere from the farming regions in the Canton of Fribourg, then age them in underground sandstone caves in their facility near Lucerne. Made from rich, unpasteurized, Alpine cow's milk, this Grand Gruyere Reserve has been aged for at least 1 year, compared with the average 4-6 months. A rustic, somewhat oily rind gives way to firm, smooth textured cheese which is slightly aromatic with a robust, assertive flavor. Wonderful served unadorned with some dark bread and figs, this is also a great melting cheese, and one that lends itself well to gratins, fondues and soups.

Named after a small rural town in the French Alps, this giant cheese (a whole wheel weighs over 80 pounds) is creamier and richer than other Alpine cheeses like Emmental, Gruyere and Comté. The term D'Alpage indicates that this Beaufort is made from milk taken from a special breed of mountain cows (Tarines) that graze naturally, as opposed to those that are fed indoors from a trough. This way, all the flavors of the Alpine countryside pass into the cheese. Due to harsh winters, the cows can only graze in the summer, limiting the production season of this so-called "Prince of Gruyeres" to the warmer months. Aging of up to 8 months takes place in the off-season in rural Alpine cellars that are naturally cool all year long. Taking a bite, hints of various grasses, herbs and wildflowers are apparent to those with a sensitive palate. Its flavor is certainly nutty, but also creamy and sweet. Like Gruyere, Beaufort melts well and is perfect for fondue or hot sandwiches.

Cheesemakers, with their task of transforming highly perishable milk into something both long-lasting and sumptuous on the palate, are known for being very particular. Few examples demonstrate this better than the birth of the AOC protected cheese Etivaz, from Switzerland. A group of concerned cheesemakers in Pays d'Enhaut, in the Canton of Vaud, disliked the current styles of Gruyere that were being produced across Switzerland. They took it upon themselves to recreate this classic cheese in a way that would highlight all the inherent flavors of the raw milk from their Alpine herds. Etivaz cheesemakers only source their milk from local herds that feed on the Canton's pastures. Only raw milk is used, so the delicate flavor of this rare milk can carry over to the final moment when the cheese is ready to be eaten. Once the milk is curded and drained, it is gently cooked over a wood fire. Once the curd is cooked, the cheese is covered in brine for twenty-four hours, then the rind is again salted and brushed. Much like the milk, the salt applied is also harvested locally. Aged for approximately seven months, the wheels are tested weekly to judge their maturation and growth. Switzerland took the legal steps to use the AOC label on their wines and other agricultural products in 1997, but Etivaz is the first cheese to receive this honor. Registered with the Swiss government in 2000, Etivas is a name-controlled gift of nature and craftsmanship that must be tried by any true connoisseur. Slightly pungent, wonderfully fruity, with a lingering flavor of hazelnuts and wild herbs, this cheese is a marvel of human determination using the best of what nature offers. Comté is a handmade, artisan cheese of the truest type. While modern techniques have been embraced where they can facilitate procedures and increase quality, the production of Comté remains based on traditional methods. Each stage is subject to strict rules that are set down in the AOC specifications to ensure each wheel is just as perfect as the last. First of all, Comté milk is produced on more than 3,000 family farms in the mountainous region of French Comté practicing non-intensive agriculture, i.e. agriculture that, rather than aiming for the highest possible yields, focuses on quality, and takes into account soil characteristics. The cheese-making process must start within twenty-four hours of the milk being collected, and so Comté is made every day. Local producers bring their milk to the cheese dairy where it is made into Comté. Generally of a cooperative nature, this particular form of village-based organization originated eight centuries ago. An approach that incorporates solidarity and sharing has been preserved, as have the small-scale production techniques and traditions which make Comté a great cheese. In the silence and shadowy darkness of the cellars Comté undergoes a second transformation, as the wheels age on spruce boards. The new wheels are carefully looked after so as to encourage the natural development of flavors as the months pass by. This Comté is aged for sixth months, were it develops a tight-knit texture and satiny body. Le Marechal is a raw cow's milk cheese produced in small batches in the town of Corcelles-aux-Payernes. Aged for 5 months, at the beginning of the third month the cheese is rubbed with Herbes de Provence (a blend of thyme, oregano and other country herbs) giving it a beautiful appearance and a wickedly spicy flavor. We were surprised by how strongly the herb flavor penetrates the rind, imparting their rustic flavor on the cheese. Reminiscent of Gruyere and Tete de Moine, Le Marechal is a new cheese that belongs among the classics.

When Gruyere cheese is first cut, the aroma suggests a million meadow flowers trapped in rich, creamy milk. Sligtly grainy, the cheese has a wonderful complexity of flavors at first fruity, then revealing a more earthy, nutty characteristic that lingers on the palate. Uses: Serve it with red or white Burgundies, a range of Rhone reds from Cote Rotie to Chateauneuf-du-Pape, Bandol, Alsatian reds and whites. Great accompaniments are: Red apples, hazel nuts and hearty breads. A classic cheese fondue.
