Cheddars of the World Assortment (2 pound) by igourmet.com

  • Assortment of four world-class Cheddars from three continents
  • Coombe Farm (England), Red Leaf (Canada) and Dairy Vale (Australia)
  • Compare and contrast
  • Enjoy with cider or ale
  • Serve with apples and crusty bread

Product Description

Along with their conquering armies, the Romans brought their cheese making expertise to England in the first century AD. But it was not until the sixteenth century when the cheese we know today as cheddar was so named. With such a long history, it's no surprise that cheddar is one of the world's favorite foods. So popular in fact, that almost every cheese-producing nation makes its own version. This assortment contains excellent examples from three continents:
  • Denhay Mature English Cheddar: Denhay Cheddar is carefully matured and monitored until it is 11 months old when it is sold as premium West Country Farmhouse Cheddar. (8 oz.)
  • Grafton Classic Reserve Cheddar: Grafton Classic Cheddar is an outstanding mature cheddar cheese selected for its pronounced flavor and smooth finish. This two year aged cheese is excellent when accompanied with dried fruits and nuts, crusty breads, and big wines. (8 oz.)
  • Great Ocean Road Cheddar: This sharp white cheddar hails from Australia, where it is made from pure milk taken from cows that graze on lush pastures swept by winds from the Southern Ocean. (8 oz.)
  • Red Leaf Cheddar: This entrant from North America has a firm texture and a sweet, honeyed flavor. Best enjoyed with ale and fruit, this cheddar is aged for over 12 months. (8 oz.)

Please note that any item temporarily out of stock will be substituted with a similar item of equal value.

Parmigiano Reggiano Aged 24 months - 1lb wedge

By: Parmigiano Reggiano
Our price:

Product Description

Few products in the world are distinguished enough to have their location built into their name, but Parmigiano Reggiano is one of them. Parmigiano-Reggiano is a hard texture cheese, cooked but not pressed. The milk obtained, from cows on a strict regime diet of grass or hay, is exclusively from the territories of Parma, Reggio Emilia, Modena and part of Bologna and Mantova. The cheese is made every day, therefore it has a variability which represents the fruit of nature. You will notice that with age comes perfection characterized by tiny white crystals grains and this 24 month specialty has these markings. The Bertozzi Brand is our preferred brand because it's name is synonomous with Parmigiano Reggiano. Abele Bertozzi S.P.A, based in Parma, founded in 1901, hand picks the finest Parmigiano wheels from all the master parmigiano small and rural cheesemakers, then stamps the Bertozzi brand logo, which has the eye-catching threes nose "il tre nostri" trademark.

28-month-aged Parmigiano Reggiano (2 lbs.)

By: Caseificio 3090
Our price:

  • Air-freighted from the finest Parmgiano Reggiano dairy, #3090, of the 493 dairies
  • Italy's "King of Cheeses"
  • Exquisite shaved over fresh asparagus, risotti or pasta

Product Description

Nestled in the rolling green hills of Borgotaro, Emilia-Romagna (Annibale Giovanni Ferrari's birthplace) this small cooperative produces a limited amount of Parmigiano Reggiano, so few that it took us three years to persuade them to allow us to sell their cheese in the U.S.! Parmigiano is made a strictly defined zone between Parma, Modena, Reggio-Emilia, Bologna and Mantua, where it has been produced for hundreds of years. A close knit network of 492 local caseificii in Emilia-Romagna and Lombardia has been granted the right to produce the protected Parmigiano-Reggiano. The Caseificio Sociale di Borgotaro, dairy 3090, is widely recognized in Italian food circles as the finest producer of Parmigiano Reggiano. It is situated highest amongst the pre-Appenine grasslands. The dairy's herds graze on nutritious, hearty grasses raised in the mountainous air. After the cows are milked, the cheesemakers at the Caseificio, breaking with tradition, insist on leaving much of the flavor-rich, high-fat cream in the whey, whereas most producers skim it off to sell it in liquid form, where it commands higher prices. Leaving a greater amount of this luscious mountain cream in the cheese creates a creamy Parmigiano with a clean milky palate and 28-month aging lends a pleasantly milky finish.

  • Since 1931 one of the USA's great cheeses
  • Rich and nutty in flavor
  • Rind rubbed with a mixture of cocoa and spices
  • Hard enough to grate

Product Description

Vella Cheese is an old timer in the world of making great American cheeses. Tom Vella began making cheese in 1931 in the Sonoma Valley of California. The company is now run by his son, Ig Vella, and is famous for its Jack cheeses. Jack cheese was created in the Gold Rush Days in Monterey, California by a Scotsman, named David Jacks. This Special Select Jack has all the same characteristics as Vella's regular Dry Jack, with its hard, pale yellow interior and sweet, nutty flavor. It is aged for a full year (as opposed to seven months) to develop an even harder texture and more intense flavor, making it similar to a Parmigiano Reggiano. This cheese goes well with fruit and wine and is excellent shaved over pasta.

Myzithra - Pound Cut (1 pound) by igourmet.com

By: igourmet
Our price:

  • Imported from Greece
  • Difficult to find
  • Dry enough to grate
  • Use Like Ricotta Salata
  • Bold, assertive flavor

Product Description

Because of Greece's less-than-fertile terrain, most of its cheeses are made from sheep's milk. Feta is, of course, the best-known Greek cheese, but fresh sheep's milk cheeses are common, as well. One of the most common of these ricotta-style cheeses is Myzithra. It has a much more interesting flavor and texture than most of the ricotta available in this country. The flavor is rather nutty, and the texture is cottony and drier than ricotta. This cheese works wonderfully in cooking, especially blended into pasta dishes. Our version of Myzithra is actually the pressed and dried version. It is similar to an Italian ricotta salata and is a popular grating cheese in Greece. The cheese is quite crumbly and salty, so a little bit can add a lot of flavor to your dishes.

Mahon Reserva (8 ounce) by igourmet.com

By: igourmet
Our price:

  • imported from Spain
  • cow's milk
  • aged minimum 12 months
  • cave ripened
  • rind rubbed in butter, paprika &olive oil

Product Description

Traditionally, the orange rind on Mahon comes from being rubbed in butter, paprika and oil. When a cheese is aged, the taste intensifies and becomes bolder and nuttier. Typical Queso Mahon is aged in the caves of Menorca for two months. Reserva is aged for at least a year. It maintains a slightly briny, sharp taste, but now becomes hard and granular; on a par with parmesan. Reserva can be grated over pasta or served as a table cheese with olive oil, black pepper and tarragon. A robust Spanish red wine can be overwhelming to young Mahon, but the Reserva definitely has the strength for this pairing. We also enjoy it with a cold glass of beer, hazelnuts, and dried fruit after a hard day's work.

Parmigiano Reggiano - Pound Cut (1 pound) by igourmet.com

By: igourmet
Our price:

Product Description

The Italians are horrified by our usage of this, the world's most famous hard cheese. Here in the States, it is thought of as purely a grating cheese. The rest of the world savours Parmigiano Reggiano as a delicious, full-flavored eating cheese.

It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks. Just sweet, fresh milk in its pristine state; the artisan's ancient skills and then nature's own good time (aged from 18 to 20 months). What you see today is just what the knights, serfs, saints and kings of old ate!

America's Test Kitchen and Cook's Illustrated have both voted igourmet.com's Parmigiano Reggiano #1 in their quest to find the best Parmesan in America today. "We preferred the igourmet regular and Vacche Rosse Parmigiano-Reggiano by a landslide, ranking them significantly higher than the other cheeses for complexity of flavor and appealing texture. And when we tasted the regular Parmigiano from igourmet against our supermarket cheeses, it was an easy winner."

By: igourmet
Our price:

  • Sweet and caramel-like
  • Packed with energy
  • Served for breakfast or midday snack
  • Made from pasteurized milk
  • Imported from Norway

Product Description

This Norwegian cheese is made from a mixture of cow and goat's milk. It has an unusual, sweet flavor due to the way in which it is processed. The milk is cooked until the sugars in it have caramelized, giving the cheese its distinctive brown color and sweet flavor. The milk is then curded and pressed. The cheese became popular as a skiers' snack and thus the label on the whole cheese is emblazoned with the words Ski Queen. It is widely popular among Scandinavians, and children in the United States are drawn to its sweet flavor.

Pecorino Romano by Zerto - Pound Cut (1 pound) by igourmet.com

By: igourmet
Our price:

  • Grating cheese with a bite
  • Excellent over pasta, rice or steamed vegetables
  • Original wheel is over 60 pounds!
  • Made from pure sheep's milk
  • Imported from Sardinia, Italy

Product Description

Pecorino Romano is Italy's oldest cheese, dating back to ancient Roman times. This hard sheep's milk cheese is typically aged for one year and used as a grating cheese. Zerto Pecorino Romano, like most Pecorino Romano made today, is made in Sardinia where land and sheep are abundant.

Romano is an integral part of many southern Italian dishes, especially those that include pasta, tomatoes, potatoes, and other vegetables. A bit drier and saltier than northern Italian "Grana" cheeses (Parmigiano Reggiano and Grana Padano), this cheese is excellent grated over pasta dishes but is not recommended as an eating cheese. For an eating Romano, please try our Pecorino Romano Genuino by Lopez, which is still made in Lazio, the region surounding Rome.

Argentine Reggianito (8 ounce) by igourmet.com

By: igourmet
Our price:

  • A grating cheese with a distinctive taste
  • Grate over pasta, rice, soup or steamed vegetables
  • Shave thinly over salads or enchiladas
  • Made from pasteurized milk
  • Imported from Argentina

Product Description

Argentina is home to endless miles of grazing pastures, where pasture fed cows produce 5,100 million liters of milk per year.

During its 50 years of independence, Argentina became a new home to many Italian farmers, who migrated in order to earn extra money for their families during the off-season. Some chose to stay, but missed their precious Parmigiano Reggiano and began making it locally using traditional methods.

Reggianito means little Reggiano because the wheel has been reduced to 15 lbs. from the enormous 80 lb. drum the Italians produce. The Argentinian wheels are smaller because it was too difficult for oxen to move enormous wheels great distances. Reggianito is cured longer than any other South American hard cheese, resulting in a rich, bountiful flavor. This cheese is slightly saltier than its namesake, but the white crystals in the cheese are not salt grains; they are crystallized free amino acids, which give the cheese its lovely grainy texture. Reggianito is perfect for cooking or grating over pasta. If you like Parmigiano Reggiano, be sure to try the Argentinian version.

  • Made from pasteurized cow's milk.
  • Photo depicts whole 15 lb. form of cheese.
  • We cut and wrap this item by the 1/2 pound.
