Chilarti is a cow's milk havarti-type cheese from the Los Lagos region of Chile. This cheese is made 40 miles inland from the Pacific Coast in Osorno, the heart of the Chilean Lake District. Brännvinsost is an aged Swedish cow's milk cheese fortified with an 80 proof Swedish liquor called Brännvin, also known as Aquavit. Made by Wernersson Ost in the style of a Tilsit, this cheese matures for at least 10 months before being injected with hard liquor. As strong as Brännvinsost may sound, it is surprisingly mild. Under the layer of midnight black wax, there is a sunny yellow cheese, firm with tiny curd holes and a texture reminiscent of aged Cheddar. Upon first taste, the cheese is mellow and buttery. Follow through to the finish for a touch of sharpness from the Aquavit. Only a small quantity of liquor is injected, but it makes a huge difference in the cheese's flavor. - Made from cow's milk.

Havarti Creamy - cow's milk, semi-soft cheese - 1 lb/454 gr, Denmark. Havarti Creamy is Denmarks most popular cheese. Traditionally the cheese is aged on rye straw and occasionally brine washed, which contributes to it's characteristic aroma of an old, humid cellar. The rind may show many colorful molds (white, yellow and red), a result of the wild grasses that the Salers cows eat during summer and autumn. The texture is semi-soft often with small eyes in the paste. The flavor is a wonderful combination of a summer pasture and sweet, fruity milk flavors. Appropriate wines: Bordeaux, Saint Estephe and Californian Cabernet.
