Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry; unfriendly to cows but suitable for raising goats and sheep. When you sample the first slice of your fresh Villegas La Mancha sheep's milk cheese you will recognize that this is truly an artisan product made by hand. It is one of our favorites. Because this fresh cheese has only aged for about two weeks it is very smooth and buttery, and bone white in color. Its texture is somewhat similar to goat's milk cheese, but its flavor is much richer. The milk used to make this wonderful cheese is identical to that used in all of the other Villajos prize winning Manchego cheeses. The only difference is that it was removed from curing after only 10-15 days! For this reason the Villegas is too young to earn the official D.O. Manchego designation. We choose it for everyday eating at breakfast with fruit. You can also serve slices or wedges of this pleasant cheese as tapas or snacks with olives, accompanied by sherry, beer or sangria. We serve it as a light dessert accompanied by traditional membrillo - quince preserve - fig or date wheels, fresh fruit or honey. The Villegas pasteurized fresh sheep's milk cheese is a part of a remarkable family of cheeses that are produced in a remote village in La Mancha. The cheeses are made in a small facility that originally was the Villajos family home, following traditional methods! They use pure fresh ewe's milk from the unique Manchega breed of sheep that graze on the pastures surrounding the village. In the Navarra region of the Spanish Pyrenees, lies the Roncal Valley. Seven villages make up this valley and control the production and marketing of the first Spanish name-controlled cheese, Roncal. Record of this cheese's production dates back as far as the thirteenth century, when the citizens of these towns worked together to raise sheep and to tend horses and the forests of the Pyrenees. Each year they would herd their flocks up the mountains to the high pastures in the spring, and each fall they would lead them back down and take their products to market. Roncal is still a product of the fresh mountain air, and it still made from raw sheep's milk. It is ripened slowly over the course of several months to develop a rustic, nutty and olivey flavor and a moist, smooth texture. - Made from unpasteurized sheep's milk.

This handmade, unpasteurized sheep's milk cheese comes from the Spanish Pyrenees. Idiazabal is naturally smoked with a hard but edible orange-brown rind. In the old days, Basque shepherds lived in small mountain huts and had no space to store and age their cheeses other than inside their stone chimneys. As it turned out, people enjoyed the smoky flavor that the cheese acquired from aging inside the chimneys, and Idiazabal spread throughout Spain. Today, Idiazabal is produced in more modern facilities, but the process is still all-natural. The cheese is as delicious as ever, and the quality is more consistent. Manchego is named for the Spanish region of La Mancha, also home of Don Quixote. This historic cheese is produced in the La Mancha region from pasteurized sheep's milk. It has a black gray or buff colored rind with a crosshatch pattern, the interior ranges from stark white to yellowish, depending on age. The aroma should suggest lanolin and roast lamb. The final cheese is usually smeared with olive oil and surface mould is removed. It has a number of holes and a mild, slightly briny, nutty flavor. It is sold at various stages of maturity: at the age of 13 weeks it is described as curado (cured) and, when over three months old it is referred to as viejo (aged).
