Manchego 6 months old (8 ounces) by Gourmet-Food.com
By: Gourmet-Food.com
Our price:
- Imported from Spain
- Sheep's Milk
- Firm Texture
- Picture depicts a 1-pound wedge
|
Product Description
Manchego is Spain's best-known sheep's milk cheese. It is named for the province where it is made-La Mancha, home of Don Quixote. However, it is not as flamboyant as the old windmill fighter. It remains relatively sweet and mild at any age with a touch of salty nuts. Manchego was originally made to barter at livestock markets and it provided durable food for the shepherds who accompanied their flocks on their long annual migrations in search of good pasture. During the ripening period the surface becomes covered with a greenish-black mold. Some cheeses have this rubbed off before they are sold. The deep ivory paste is firm, compact, and perforated with tiny holes. It has an aromatic smell with a hint of butterscotch. This effect is strengthened on the palate together with some nutty tones. We cut and wrap this cheese in wedges of 8 ounces and 1 pound.

|
Product Description
Every Taste Value just $12.99 per pound (regular price $17.99). Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry; unfriendly to cows but suitable for raising goats and sheep. The abundance of wild herbs on Central Spain's grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant ,while its texture is firm but not dry. Manchego can be recognized by the zigzag pattern etched into its rind. This is created by the rippled surface of the press used in the manufacture of the cheese. Underneath the inedible rind, the interior is ivory colored with few small holes. Taste Manchego for the first time and you will be surprised at how long the wonderful flavor lingers on your palate. It is an experience you will be drawn back to again and again. - Made from pasteurized sheep's milk.

Product Description
Manchego is named for the Spanish region of La Mancha, also home of Don Quixote. This historic cheese is produced in the La Mancha region from pasteurized sheep's milk. It has a black gray or buff colored rind with a crosshatch pattern, the interior ranges from stark white to yellowish, depending on age. The aroma should suggest lanolin and roast lamb. The final cheese is usually smeared with olive oil and surface mould is removed. It has a number of holes and a mild, slightly briny, nutty flavor. It is sold at various stages of maturity: at the age of 13 weeks it is described as curado (cured) and, when over three months old it is referred to as viejo (aged). There is a peppery bite to cheeses that have reached a great age. It is best known of a series of sheep's cheeses and is similar to Zamorano, Cadiz, Calahora or Castelleno.

Idiazabal (8 ounce) by igourmet.com
By: igourmet
Our price:
- imported from Spain
- unpasteurized sheep's milk
- delicately smoked
- handmade
- perfumey bouquet, buttery flavor
|
Product Description
This handmade, unpasteurized sheep's milk cheese comes from the Spanish Pyrenees. Idiazabal is naturally smoked with a hard but edible orange-brown rind. In the old days, Basque shepherds lived in small mountain huts and had no space to store and age their cheeses other than inside their stone chimneys. As it turned out, people enjoyed the smoky flavor that the cheese acquired from aging inside the chimneys, and Idiazabal spread throughout Spain. Today, Idiazabal is produced in more modern facilities, but the process is still all-natural. The cheese is as delicious as ever, and the quality is more consistent. We love its perfumy bouquet, and rich, buttery flavor and enthusiastically recommend Idiazabal as one of Spain's greatest cheeses. - Made from unpasteurized sheep's milk.
- Photo depicts whole 7 lb. form of cheese.
- We cut and wrap this item by the 1/2 pound.
