The worlds most famous melting cheese, Raclette is made in the Alps on both sides of the French-Swiss border. The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. However, it does tend to have a strong, pungent aroma that is not for the timid. French Mimolette, also called "Boule de Lille," dates back to the reign of Louis XIV, who prohibited the import of Dutch cheeses into France. The residents of Flanders, the northernmost region of France, have strong cultural ties to Holland (many still speak Dutch as their first language today) and dearly loved the banished Dutch specialties. Their alternatives were to either smuggle in the contraband cheeses or make a go at producing their own - with a French twist of course! And so, Mimolette was born. Young Mimolette is a semi-hard cheese that has the same texture and spherical shape as Dutch Edam. It is produced in bowling-ball sized nine pound spheres with a bright orange-colored interior and orange wax rind. Its taste is gloriously sweet yet uncommonly tame for a French cheese. Product Description

Toma Piedmontese dates back to Roman times, but did not become identified by its name until the 11th century. The name appears to have come from the old French word tumer, meaning to fall or to turn. To us, Toma means the cheese is a product of several herds from the same region and implies it is made by a cheese making specialist rather than a farmer with a surplus of milk who might not be adept at cheese making. Like the Tommes of Savoie, each Alpine Valley produces its own distinctive version of Toma. Made in the Aosta Valley and Piedmont, they strain the unpasteurized milk and then rennet is added. The curds are broken up and drained, then placed in molds. They are often dried for a couple of days under a layer of mountain grasses to give them additional flavor. Toma is cheese surface ripened, meaning it ripens from the rind inward. This simple mountain cheese has a thin rind with a custard-like interior with small pores and a gentle sweet-sour nature. Toma is a perfect table cheese but can also be used for cooking. It begs to be paired with a big Piedmont red.

At the beginning of the nineteenth century, three brothers, Luis, Fortunato and Jose Magnasco emigrated from Santa Margherita, Italy, searching for new horizons. Their destiny was going to be in South America, specifically Argentina. Soon after arriving, they got involved with the local dairy industrys retail and production of cheese and butter. By 1855 they began their own commercial activities under the name of Magnasco Hnos. Today, the family tradition continues with the 3rd. and 4th. generations running Magnasco Hnos. Magnasco´s cows are fed all year round on a natural enviroment. The Argentine Pampas allow their cattle to feed from green pastures even in winter. They graze freely upon the land, as a result these natural and non-stress conditions enable them to obtain a high quality milk.Their flavored Edams are aged for two months, hard enough to grate, and make wonderful toppings for any rice, vegetable or pasta dish. We offer three flavors: Fine herbs, 3 peppers, and Caprese. Varieties sold separately.

Until the 19th Century this perennial favorite was known as Valais. Taking its modern name from the French verb racler (to scrape), Raclette is now one of the most popular mountain cheeses worldwide. Made from whole, unpasteurized cow's milk, this raclette is typically aged 3-4 months. Smoother than gruyere, Raclette has a creamy and supple texture with fruity undertones that intensify when melted. A little firmer than its French counterpart, our Swiss Raclette is great served with Bunderfleisch or cured ham. Traditionally served with kirsch or beer.

Provolone is a northern Italian cheese that can be thought of as Mozzarellas older brother. Take some Mozzarella, form it into your favorite shape and rub it down with brine, bind it with rope and hang it from the ceiling for a few months and Voila! - you have just made Provolone. There are two varieties of Provolone. Dolce (meaning sweet) is the mild version and Piccante (meaning sharp) is its spicy, more aged counterpart. We sell the Piccante version, which is less available and more interesting than the mild Provolone most Americans have come to know. One of the great sandwich cheeses, Provolone Piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette. Made from raw cow's milk, aged over 9 months.
