Other than Revilla chorizo (which we now offer, as well) all other chorizos, good as they may be, are made in the USA with Spanish ingredients. Palacios mild chorizo is made from a generations--old recipe by a family owned company in La Rioja. It was featured in the New York Times and Wine Spectator magazine. These delicious pork sausages are seasoned with sweet smoked Spanish paprika -- pimenton dulce. It is a mild blend of the distinctive smoked paprika that sets Spanish chorizo apart from sausages from any other country. These chorizos are fully dry-cured and ready to eat with your favorite cheese and wine, or just a chunk of crusty bread. It is about 1 inch thick.

In the United States, many people associate paprika with foods from Eastern Europe, particularly with the cuisine of Hungary. The peppers used to make paprika are actually natives to the New World, but they are now grown in several countries, including Hungary and Spain. Spanish paprika is known as pimenton. It is made from round peppers that are about the size of a peach, is a paler shade of red than Hungarian paprika, and has a slightly different flavor. It is almost sweet in taste and is used both as a coloring agent and as a spice. The Spanish add it to seafood, sausages, rice and many other savory dishes. This Denomination of Origin product, Pimenton de la Vera, is made from oak fire dried native peppers that are stone ground to a fine texture. The peppers adopt a pleasingly smoky flavor from the fires. The resulting spice, a powdery smoked paprika, is available in sweet (dolce) and hot (picante) varieties. Smoked paprika's use in cooking is almost endless. It adds an extra level of flavor to chili, soup and stew; sparks up sauces, scrambled eggs or omeletts; and makes deviled eggs or spiced nuts deliciously different. Essential to a Spanish sauce named romesco, smoked paprika complements many Southwestern dishes as well. Rub it on meats to add a subtle, smoked flavor without actual smoking. Capers, the flower bud of a Mediterranean shrub are a very versatile ingredient, condiment, flavor, and tradition. Their flavor, when cured in brine, tends to be reminiscent of a cornichon or gherkin. They are vibrant, aromatic with just the right balance of salt. Many people prefer medium capers because they have more impressive visual appeal and a milder flavor. Caper flower buds grow quickly, and they are small enough to be classified this size for only a very short time. Varieties are selected for flavor and for the roundness and firmness of the buds. Most capers are packed in vinegar, and this imparts a pickled flavor to them - as a result, the tangy finish tends to dominate the flavor of the aromatic caper. Mustapha cures his capers in salt brine, and then packs them in saltwater with just a tiny amount of vinegar. The result is a deep aromatic, salty flavor with a hint of a tang on the finish. These brined capers are perfect for use with rich foods such as salmon or in rich sauces. The caper bush is a spiny, straggling vine-like shrub that grows well in nutrient poor, gravelly soils, and is often found growing in crevices between rocks. Capers are the flower buds from this plant. A freshly picked caper is a bland little thing. That fabulously vibrant, piquant flavor comes from the curing process. Their salty, aromatic flavor makes them an important ingredient to sauces like tartar, ravigote and rèmoulade and most tapenade recipes. There is no better condiment for smoked or cured salmon. Caper bushes grow wild around the Mediterranean, flourishing in the same climates as olives, and in fact, we have come to recognize the flavor of a caper as classic Mediterranean. They are cultivated and collected in their natural range - in Spain, the south of France, Italy, Dalmatia, Greece, Algeria, Egypt, Tunisia, and especially Morocco.

Cetara is one of those enchanting fishing villages on the Amalfi Coast. There are two theories on the origin of its name: one, from "cetarii" meaning fishermen or fishmongers; the other, from "cetarium", a plant that cures and stores fish....... whichever, the historical link to fish is clear.
