Blue Wensleydale is a delicacy fit for newcomers and connoisseurs alike. After maturing for six months, this cheese is exquisite. Inside the golden rind, a moist, close-textured, blue-veined cheese awaits discovery. Similar to Stilton but with a mellowed flavor. Blue Wensleydale has a rich creamy texture, and departs with a honeyed sweetness. Traditional Wensleydale, while maturing in farmhouses throughout the dale during the late nineteenth and early 20th centuries, would have naturally blued. However, as cheese was produced on a factory scale in the mid 1900's and beyond, the white, crumbly variety, became fashionable and the blue variety became extinct in the dale. However, Wensleydale Dairy has revived 'old fashioned' Wensleydale Blue cheese by emulating the classic recipes. Blue Wensleydale cheese is lightly pressed for only 24 hours before being bound in muslin fabric. It is then transferred to a humidified maturing room, akin to a farmhouse or monastery cellar: dark, cool, & moist. The cheese is turned regularly, pierced to facilitate blue mould evolution and matured for at least six weeks. - Suitable for vegetarians.
