A cheese that requires three adjectives to describe it had better be something special. Well, we nearly died of delight when we first sampled this remarkable cheese. In our minds, the chance that any cheese could be even more flavorful than our 18-month Aged Gouda was remote. But this one pulled it off! The first thing we noticed about our new 36-month Gouda was that its texture was crumbly, like that of Parmigiano Reggiano or Grana Padano. Then we tasted it, and WOW! was it packed with flavor. Butterscotch immediately came to mind, followed by alternating waves of whiskey and pecan. All this from a product with three basic ingredients: milk, salt and, most importantly, time.

Because of Greeces less-than-fertile terrain, most of its cheeses are made from sheeps milk. Feta is, of course, the best-known Greek cheese, but fresh sheeps milk cheeses are common, as well. One of the most common of these ricotta-style cheeses is Myzithra. It has a much more interesting flavor and texture than most of the ricotta available in this country. The flavor is rather nutty, and the texture is cottony and drier than ricotta. This cheese works wonderfully in cooking, especially blended into pasta dishes. Our version of Myzithra is actually the pressed and dried version. It is similar to an Italian ricotta salata and is a popular grating cheese in Greece. The cheese is quite crumbly and salty, so a little bit can add a lot of flavor to your dishes.

Product Description

The worlds most famous melting cheese, Raclette is made in the Alps on both sides of the French-Swiss border. The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. However, it does tend to have a strong, pungent aroma that is not for the timid. This cheese is traditionally melted (a half wheel is placed in a fireplace, then the melted top surface is continuously scraped off) and layered atop boiled potatoes, pickles, fresh vegetables and sliced meats.
