Thought of here in the States as purely a grating cheese, the rest of the world savours Parmigiano-Reggiano as a delicious, full-flavored eating cheese. It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks... just sweet, fresh milk in its pristine state... then the artisan's ancient skills... and then nature's own good time (aged from 18 to 36 months). What you see today is just what the knights, serfs, saints and kings of old ate! Cahill Farm Cheddar with Porter Ale is a visually intriguing cheese. Mixed with dark porter ale during the cheesemaking process, this cheese has a marbled effect with dark brown veins. Because of Greeces less-than-fertile terrain, most of its cheeses are made from sheeps milk. Feta is, of course, the best-known Greek cheese, but fresh sheeps milk cheeses are common, as well. One of the most common of these ricotta-style cheeses is Myzithra. It has a much more interesting flavor and texture than most of the ricotta available in this country. The flavor is rather nutty, and the texture is cottony and drier than ricotta. This cheese works wonderfully in cooking, especially blended into pasta dishes. Our version of Myzithra is actually the pressed and dried version. It is similar to an Italian ricotta salata and is a popular grating cheese in Greece. The cheese is quite crumbly and salty, so a little bit can add a lot of flavor to your dishes.

Dubliner was first described to us as a mixture between Cheddar and Parmigiano Reggiano. This description is quite accurate. Dubliner tastes of a mature Cheddar with the sweet aftertaste of Reggiano. Created by the Irish company Kerrygold and named after Irelands capital city, this cheese shares traits with several well-known cheeses but the combination creates a flavor that is completely unique.

This cheese is every bit as good as it sounds! Basiron is a creamy-tasting, Gouda-style Dutch cheese jazzed up with pesto. Perfectly balanced and extremely addictive, this glitzy cheese "shows off" for Christmas, St. Patrick's Day, or almost any occasion. Its ingredients include pasteurized cows milk, vegetarian rennet, and pesto (basil and garlic). It has 50% fat in dry matter and is aged approximately 5-6 weeks for a firm, yet youthful texture. The Veldhuyzen family in Holland, whose cheese making tradition dates back to the 1800s, makes a variety of innovative cheeses. Although Basiron is a show stopper on the cheese board, its festive color is always ready to complement a tray of vegetables or equally colorful cheeses such as red-waxed Gouda or Edam. Unlike our other French Camembert, this one comes from Normandy, where Camembert was first created in 1791 by Marie Harel. During the French Revolution, a recalcitrant priest from Brie (the village, not the cheese) arrived at the Manor of Beaumoncel in the village of Camembert and was hidden there by Marie Harel, a farmer. Following the direction of this priest, she created Camembert. The recipe was a success and her children and grandchildren continued the family tradition. Over time, word spread and Marie's cheese became famous all over the world. Camembert Le Châtelain is an excellent example, with a recipe that is true to the original. It is succulent, ripe, rich and creamy. Only gently pasteurized at moderate temperatures, Camembert Le Châtelain retains most of the authentic flavors and qualities of the raw-milk cheese you can buy only in France. Excellent served with light reds from the Loire Valley or Champagne, in Normandy this cheese is paired with an apple liqueur called Calvados. Apples, Camembert and Normandy are inextricably linked. Norman dairy farms are peppered with apple trees that protect the rich soil. In fact, some people claim to be able to taste a hint of apple beneath the creamy suppleness of fresh Camembert.

Made from a centuries-old recipe, 70-pound wheels of Gruyere de Comté (Comté, for short) have been produced since the reign of Charlemagne, when there were no separate entities named France and Switzerland. Although Swiss Gruyere may be better known, the French variety is no less special. Created by local villagers in alpine dairies called "Fruiteries", its milk comes only from Montbeliarde and Tachete de L'est cows. Contributing to Comté's unique flavor, morning and evening milkings are mingled before the cheesemaking process. The wheels are aged for six months, resulting in a sweet and nutty masterpiece with less bite than its twin from Switzerland. Comté has a satiny, ivory-colored body and a scattering of holes the size of a hazlenut. A traditional fondue cheese, Comte can also be shredded, sliced, grated, chunked or melted - it can always be called upon and never disappoints. Made from raw cow's milk aged over 60 days
