To help you celebrate Oktoberfest, we offer this wonderful assortment of four of our favorite German cheeses. - Allgau Emmental, commonly referred to as Bavarian Swiss, is arguably the most famous cheese made in Germany. Made from pure Bavarian milk, it is high in protein and has that familiar, yet special flavor.
- Rauchkase is a smoked cheese typical of Bavaria. This specialty was originally produced by Trappist Monks in the abbey of Rotthalmunster. The young cheese is smoked over select beechwood embers, a process that lends Rauchkase its unique flavor.
- King Ludwig Beer Cheese is a delicate yellow, semi-hard cow's milk cheese with small holes ripened in fine King Ludwig dark beer to give it its hearty taste (8 oz.).
- Paladin Bavarian Blue is a tangy, crumbly pasteurized blue cheese produced in the Bavarian Alpine countryside. Extremely versatile, you'll love it in salad; as part of a recipe; or on a cracker.

The name is a bit corny, but at least it's accurate. Chevrelait, pronounced like the American car company, is the combination of the French words "Chevre" - meaning "goat", and "Lait" - meaning "milk". We discovered this brand new smoked goat's milk cheese while in Holland not too long ago. Similar in looks to Dutch Smoked Gouda, it is a log-shaped cheese with an edible brown rind and a pale white interior. That is where the similarity ends, however, as Chevrelait tastes decidedly "goaty". If you like the taste of traditional chevre, you'll find Chevrelait to be a familiar, yet unique alternative. - Made from pasteurized processed goat's milk.

The milk is delicately handled and made into cheese by our artisan cheese makers within 10-13 hours of having been delivered fresh from the farm. The natural aging of our cheese, which takes from one to four years, and the high protein and butterfat of Vermont Jersey milk, give this cheese an exceptionally creamy and robust flavor.
Bathed in the cool smoke from smoldering maple wood for up to six hours, what taste could be more indigenous to Vermont? The smoke only seasons the already-aged cheddar. It's a wonderful accompaniment to maple cured bacon and an ideal ingredient in several breakfast dishes. It also stands alone as a great snacking cheddar.

This handmade, unpasteurized sheep's milk cheese comes from the Spanish Pyrenees. Idiazabal is naturally smoked with a hard but edible orange-brown rind. In the old days, Basque shepherds lived in small mountain huts and had no space to store and age their cheeses other than inside their stone chimneys. As it turned out, people enjoyed the smoky flavor that the cheese acquired from aging inside the chimneys, and Idiazabal spread throughout Spain. Today, Idiazabal is produced in more modern facilities, but the process is still all-natural. The cheese is as delicious as ever, and the quality is more consistent.
