To help you celebrate Oktoberfest, we offer this wonderful assortment of four of our favorite German cheeses. - Allgau Emmental, commonly referred to as Bavarian Swiss, is arguably the most famous cheese made in Germany. Made from pure Bavarian milk, it is high in protein and has that familiar, yet special flavor.
- Rauchkase is a smoked cheese typical of Bavaria. This specialty was originally produced by Trappist Monks in the abbey of Rotthalmunster. It is smoked over select beechwood embers, a process that lends Rauchkase its unique flavor.
- King Ludwig Beer Cheese is a delicate yellow, semi-hard cheese with small holes ripened in fine King Ludwig dark beer to give it its hearty taste (8 oz.).
- Paladin Bavarian Blue is a tangy, crumbly blue cheese produced in the Bavarian Alpine countryside. Extremely versatile, you'll love it in salad; as part of a recipe; or on a cracker.

Handcrafted cheese, made in small batches from the milk of Jersey cows that graze on several Vermont family farms, is what makes Grafton cheddar one of Vermont's, and the country's, finest artisanal cheeses. Grafton cheddar has no chemical additives, synthetic growth hormones or preservatives. The milk is delicately handled and made into cheese by our artisan cheese makers within 10-13 hours of having been delivered fresh from the farm. The natural aging of our cheese, which takes from one to four years, and the high protein and butterfat of Vermont Jersey milk, give this cheese an exceptionally creamy and robust flavor.
Bathed in the cool smoke from smoldering maple wood for up to six hours, what taste could be more indigenous to Vermont? The smoke only seasons the already-aged cheddar. Product Description
Maple Smoked Cheddar is just one of the Grafton Village Cheese Company's excellent cheeses. It is bathed in the cool smoke from smoldering hard maple wood for four to six hours at the end of the aging period. What taste could be more typical of Vermont? The smoke is used to season, not to preserve. It adds a delicious nuance reminiscent of bacon, and is an excellent part of any breakfast menu (try it in an omelet!) and on cocktail trays. We were so impressed by its quality that we honored Maple Smoked Cheddar from Grafton Village as our July 2002 Cheese-of-the-Month. - Made from pasteurized cow's milk.

A longtime summer resort area for well-to-do Poles, Mragowo is also noted for its lush farms and robust dairy production. Damski, which is naturally smoked over wood embers, is a semi-soft variety with a pleasant, sweet flavor combined with the typical qualities of any smoked cheese. Although Germany is a country with a massive dairy industry, their cheeses remain relatively unknown to those of us outside its borders. One reason for this could be the majority of German cheeses are simply imitations of its neighbor's specialties. However, there are exceptions. Bruder Basil comes to us from Bavaria and is made in the tradition of Rauchkäse, a smoked cheese typical of the region. Originally, Basils were manufactured by Trappist Monks in the Abbey of Rotthalmunster. In 1902, Basil Weixler founded the Bergader Private Cheese Dairy. Today, Bergader still works in accordance with this old tradition of craftmanship. It is still smoked over selected beech wood, which gives it its special flavor. This semi-soft cows milk cheese has a darker, natural rind and a rich, creamy texture. With its smoky flavor, Bruder Basil is ideal for grilled sandwiches; as an alternative to raclette and gratins; and perfect for snacking with your favorite dark German beer or dry white wine. - Made from pasteurized cow's milk.

This specialty hails from the Southern Italian provinces of Abbruzo, Calabria, Campania and Sicilia. The meaning of its name has been debated for centuries, but its Latin roots are Cacio - cheese and Cavallo - horse. Some historians think it is so named because it was originally made from mare's milk, others because it was transported on horseback. The most popular theory is that the name has nothing to do with a horse, rather that caciocavallo is a copy of an ancient Turkish cheese called qasqawal. The origins of the name notwithstanding, caciocavallo is a traditional pasta filata (stretched curd) cheese made from cow's milk. Other pasta filata type cheeses are mozzarella and provolone. Caciocavallos are gourd-shaped and come to us in pairs, tied together by a rope that loops around the "neck" of each cheese. After an aging period of three months, this ancient cheese takes on a tangy, meaty flavor with hints of anise and almonds. We cut each caciocavallo into quarters, making four one pound cuts. The name is a bit corny, but at least it's accurate. Chevrelait, pronounced like the American car company, is the combination of the French words "Chevre" - meaning "goat", and "Lait" - meaning "milk". We discovered this brand new smoked goat's milk cheese while in Holland not too long ago. Similar in looks to Dutch Smoked Gouda, it is a log-shaped cheese with an edible brown rind and a pale white interior. That is where the similarity ends, however, as Chevrelait tastes decidedly "goaty". If you like the taste of traditional chevre, you'll find Chevrelait to be a familiar, yet unique alternative. - Made from pasteurized processed goat's milk.
