About 100 years ago, a farmers wife who lived in North Zealand (one of Denmarks most romantic islands -- a trysting place for lovers) became interested in the art of cheesemaking. She traveled through Europe to learn the secrets of this craft. Upon her return, she began to experiment with her newly acquired techniques. She named her finest creation after her farm, "Havarthi". Todays Cream Havarti is a direct descendant. It has an ivory interior patterned with a myriad of tiny holes and is mild, creamy and mellow. Product Description

Scamorza is a pasta filata (spun cow's milk) cheese from Italy. Pear shaped, it is made the same way as mozzarella. This cheese is aged for a couple of days, has a chewey, stringy texture and is drier than mozzarella. It is available in smoked (affumicate) or plain (bianca). Both types of Scamorza are used in cooking, particularly in pasta dishes. The bianca is excellent served the same way as mozzarella, sliced thinly with extra virgin olive oil and fresh cracked pepper or fresh herbs. Try the affumicate served with ham, mushrooms or chargrilled vegetables. Varieties sold separately.

This handmade, unpasteurized sheep's milk cheese comes from the Spanish Pyrenees. Idiazabal is naturally smoked with a hard but edible orange-brown rind. In the old days, Basque shepherds lived in small mountain huts and had no space to store and age their cheeses other than inside their stone chimneys. As it turned out, people enjoyed the smoky flavor that the cheese acquired from aging inside the chimneys, and Idiazabal spread throughout Spain. Today, Idiazabal is produced in more modern facilities, but the process is still all-natural. The cheese is as delicious as ever, and the quality is more consistent. We love its perfumy bouquet and rich, buttery flavor and enthusiastically recommend Idiazabal as one of Spain's greatest cheeses. Made from unpasteurized ewe's milk.

Maple Smoked Cheddar is just one of the Grafton Village Cheese Company's excellent cheeses. It is bathed in the cool smoke from smoldering hard maple wood for four to six hours at the end of the aging period. What taste could be more typical of Vermont? The smoke is used to season, not to preserve. It adds a delicious nuance reminiscent of bacon, and is an excellent part of any breakfast menu (try it in an omelet!) and on cocktail trays. One reason for this could be the majority of German cheeses are simply imitations of its neighbors specialties. However, there are exceptions. Bruder Basil comes to us from Bavaria and is made in the tradition of Rauchkäse, a smoked cheese typical of the region. Originally, Basils was manufactured by Trappist Monks in the Abbey of Rotthalmunster. In 1902, Basil Weixler founded the Bergader Private Cheese Dairy. Today, Bergader still works in accordance with this old tradition of craftmanship. It is still smoked over selected beech wood which gives it its special flavor. This semi-soft cows milk cheese has a darker natural rind and a rich creamy texture. With its smoky flavor, Bruder Basil is ideal for grilled sandwiches, as an alternative to raclette and gratins, and perfect for snacking with your favorite dark German beer or dry white wine.

The name is a bit corny, but at least it's accurate. Chevrelait, pronounced like the apple-pie American car company, is the combination of the French words "Chevre" - meaning "goat", and "Lait" - meaning "milk". We discovered this brand new smoked goat's milk cheese while in Holland not too long ago. Similar in looks to Dutch Smoked Gouda, it is a log-shaped cheese with an edible brown rind and a pale white interior. That is where the similarity ends however, as Chevrelait tastes decidedly "goaty". If you like the taste of traditional chevre, you'll find Chevrelait to be a familiar yet unique alternative. Beyond the northern slopes of the Cantábrica range, lies the Principality of Asturias. It is regarded as an enduring bastion of basic values and traditions of Spain. The inaccessibility of this mountainous territory, wedged as it is between the ocean and the high mountains which separate it from the central meseta, has kept it unspoiled and with its traditions intact. This is also why it is Spain's richest cheese producing area today. Gamonedo is made with raw full cow's, goat's and sheep's milk, mixed in a fixed proportion and with animal rennet. It is left to curdle for a day, molded and salted. It is lightly pressed so it is more compact than Cabrales. Gamonedo is lightly smoked, then matured in natural caves for at least 3 months. The rind is naturally formed and dry with a gray mold. The mild smokiness of this blue combined with a lively, spicy buttery flavor makes this a very special cheese. Try pairing it with young Riojas or even cider. Its crumbly texture makes it good on salads, simply served on toasted fresh bread, melted or used in sauces.
