Fol-Epi is a Emmental-style cheese that is produced in France's Loire Valley. With typical French Flair, the 6.6 pound wheel carries a lovely image of wheat stalks, pressing out from the cheese's surface. The wheat is a reminder of the toasted wheat flour that coats this soft cheese's surface, and even its name translates to wild wheat. Soft and springy on the interior, with a scattering of dime-sized eyeholes, this cheese is aged for only three months. American connoisseurs may be reminded of the cheese Teleme when tasting the floured rind. The cheese itself is mild, sweet, and gains a slight hazelnut flavor from the toasted wheat on the rind. Located in Walpole, Boggy Meadow Farm is the only licensed cow's milk cheese producer in the state of New Hampshire. Over the past 180 years, many traditions have been developed on the farm. Today those traditions continue under the leadership of Powell Cabot, who inherited the farm in 1993. Boggy Meadow Farmstead Baby Swiss is made from fresh, unpasteurized milk taken from Boggy Meadow's own herd of Holsteins. Their herd is recognized for the quality and wholesomeness of its milk. One of the attractive features of farmstead whole milk is the subtle and interesting variation in flavor and texture from batch to batch and even within each batch, throughout the year. Emmental is a traditional Swiss gourmet cheese with cooked pressed paste. It is produced starting from milk believed of high quality resulting from specific breeds of local cows primarily nourished on grass and the hay. When most of the world thinks of 'Swiss Cheese' they are really thinking of Emmental. Ours is not some imitation processed cheese, this is the real deal. Emmental is one of the largest cheeses in physical size in the world. More than 264 gallons of milk is required for one cheese. During the whole of the ripening process the cheeses have to be turned regularly. In the past this had to be done by hand and the strong muscles of the cheese makers were much feared in the wrestling ring. It has a characteristic smooth pale yellow rind. The flexible paste is a lovely deep yellow color with holes the size of cherries, walnuts, or even golf balls. It is during a long refining (10-12 weeks) that Emmental will reveal all its flavors and nutritional qualities: a soft and consistent paste, a frank and fruity taste mixed with fine flavors. A truly gourmet cheese that has become a standard, world wide.
