Do you want to taste what all the excitement is about? We have for you the first hand-sliced Ibérico de Bellota from Spain, imported by Jamones y Embutidos Fermin. Now you can order a 4 oz. package of about 16 paper thin slices. These slices of Iberico de Bellota come from the front leg, or shoulder, of an acorn finished Ibérico pig. This is contrast to the Jamón, which is the back leg of the Ibérico de Bellota pig. We have the paletas earlier because their smaller size takes less time to cure. Each week a local company slices our paletas by hand so we can ensure the thinnest, most delectable slices. Serve at room temperature with crusty bread and a fine wine. You will be able to see that it is truly 'bellota' by the way the mono-unsaturated fat glistens on each slice of ham. Iberico de Bellota comes from Iberico pigs that range freely across southwestern Spain, consuming huge amounts of acorns ('bellotas' in Spanish). This wonderful combination of diet and exercise, along with expert dry-curing, creates what many connoisseurs call the finest (and healthiest) ham in the world. The paleta bellota is carefully cured by Embutidos y Jamones Fermín in the medieval mountain village of La Alberca, creating an intense, complex flavor. While Paleta is not the highest pinacle of Iberico ham, a place reserved only for the whole Jamón Iberico de Bellota, its taste is as close as you can get! Until now only a select few have been able to enjoy Spains most famous cured meat. These are packages of very thinly sliced Black Label Reserva ham by Redondo Iglesias. After importation, we have it sliced weekly by a local Virginia smokehouse owner in a neighboring town. This is true jamon serrano imported from Spain: a lean ham with a rich nutty flavor, salt-cured for 14 to 18 months in Spain. By slicing our hams locally, we assure that the slices remain fresh and flavorful. Once packaged, we apply our house Peregrino label , a symbol of its quality handling. Our slicer carves each whole ham by hand, placing an interleaf between the slices. There are about 15 full slices per pack, the number varies slightly, because it is sliced by hand. Time for serving tapas? Just peel off the slices you want, and keep the rest in a zip-lock package for another day.

This Jamón Serrano comes from animals that were born in the region of Salamanca in western Spain. They were raised humanely in the mountains, and spent much of their lives outdoors on Spanish pasture land.
Jamón Serrano literally means 'mountain ham' in Spanish and, of all the hams available in the U.S., these are the most authentic from this standpoint. Each ham is hung to dry in the cool, clean mountain air where it ages for 18 to 20 months.
The curing process which results in the Fermín Jamón Serrano is completely traditional. The hams are cured in drying rooms with open screened windows, caressed by mountain air as it wafts through the area where the hams are hung.

Legend has it that the "Brunswick" in Brunswick Stew comes from our friends a couple of counties over in the extreme Southeastern corner of North Carolina.
