Agostino Recca, from Sciacca, Sicily, has become one of the most reliable producers of anchovies now being imported into the United States. The Recca family is not a stranger to quality, flavor and tradition.
These Recca Anchovies from Sicily are are whole salted fillets packed in salt and a touch of brine. It is also important to note that these anchovies do require some extra work to remove the backbone and tail, but the extra work and time to soak these de-boned anchovies in cold water for 15-20 minutes before using, yields a flavor out of this world and we have actually found they are less salty than the oil packed anchovies.
We recommend that once the can is opened, to keep the remainder of anchovies and salt in an airtight container in the refrigerator where they will keep indefinitely.

Cetara is one of those enchanting fishing villages on the Amalfi Coast. There are two theories on the origin of its name: one, from "cetarii" meaning fishermen or fishmongers; the other, from "cetarium", a plant that cures and stores fish....... whichever, the historical link to fish is clear. Fresh anchovies are preserved in barrels layered with water and sea salt. The process is quick and simple. The anchovies are soft, moist, and plump. This dried salted roe made by the Manca brothers is, without any doubt, the best bottarga in the world.
Grey mullet is, perhaps more than any other animal, what it eats. In the pond in Cabras, where these grey mullet are raised, the fish eat naturally and healthfully.
The mullet's eggs, after being extracted, washed and purified, are put under salt and then hung to mature. At the right moment--and the expertise of the Manca brothers is put to good use in determining exactly when that is--the dried and salted eggs that make bottarga are pressed and sent for distribution.
The color of the roe ranges from gold to dark amber. The saline aroma is accompanied by notes of almond and musk. Oro di Cabras has a smoothness that other bottarga can never achieve. A smoothness exalted in the bottarga with su biddiu (in the local Sardinian dialect: the bellybutton). Only the biggest and healthiest grey mullets (one in thirty, on average) allow the expert fisherman to extract the whole egg sac up to the "bellybutton", the external belly part, thus avoiding any contact between the eggs, hermetically protected inside the sac, and the outside.

Colatura di alici - Salted Anchovy Sauce, is a highly concentrated saline mixture derived by the drippings of the anchovies packed in wood barrels with salt. Traditional of the villages along the coast of Campania, whose inhabitants have been producing colatura for centuries and traditionally exchanged it in phials at Christmas time as a sign of friendship, colatura has gradually become a connoisseur item for its extremely rich fish flavor that adds an intense accent to all dishes. Colatura dates back to Roman times when the name for it was "garum", a precious salty fish sauce made in innumerable variations, both simple and refined. Considered today a culinary tradition worth being preserved (Slow Food included colatura in his Presidio of foods in risk of extinction) a growing number of anchovies lovers has set out to search for the best expressions of this culinary Italian tradition.
Our colatura comes from the village of Cetara, a steep Mediterranean fishing village on the coast of Campania, whose economy solely depends on the the village anchovy fishing activity.
The anchovies fished on this area of the Medittearranean Sea are particularly small and flavorful and make an exceptional colatura. A distinctive mark of authentic colatura is that the anchovies packed in salt are placed in special wooden barrels, made by the last artisans of the area such as the ones used to make the colatura we carry. Colatura is an historical Mediterranean flavor worth bringing back to enhance all dishes - from antipasti to entrees.

Product Description
Vincenzo Macrì, from the fish preserving company Tre Torri, is among the few people able to procure a part of the supply of the local tuna, fished in the nearby island of Favignana, from the demands of the Japanese and American markets. This way he manages to offer a bottarga (dried and salted roe) made from local tuna eggs, when the majority of the ones on the market are obtained from Atlantic tuna. The term bottarga, from the Arab bot-ah-rik, means "raw fish eggs" or "uovo di tonno" (tuna egg) as it is known in Italian. The whole egg sacs are properly washed and salted, and then put to dry in the sun. Nothing is simpler than this food so it depends upon top-quality fish eggs. The final product's taste and quality depends upon the balance in the salting process and the drying, which must be done very gently to avoid oversalting and dessication. Easy to say, very hard to do. A pinch of salt less than necessary, and the precious sac rots; a day longer in the sun, and it dries up. Dried tuna roe has a flavor that is stronger than grey mullet roe, but it's just as adaptable. It can be eaten very simply with bread, after being sliced in thin shreds and left to soften in olive oil for at least half an hour, or in the classic Sardinian pasta dish Spaghetti Con La Bottarga (always add the bottarga at the end on the dish, not in the pan), or in fancier combinations. It is always delicious on omelets, rice, and mashed potatoes.
