Product Description
Fire roasted and hand peeled Pimientos del Piquillo are a unique specialty of a village in Navarra. They have only become available for export in the last 25 years.
A generation ago the fabled Basque chefs, capitalizing on the characteristic of the Piquillo peppers to retain their shape even after cooking, began experimenting with various stuffings. They used calamares, crabmeat, ground pork, bacalao salt cod, chorizo, Morcilla. The variety seemed to be endless, and as visitors brought home rave reviews from their visits to the region a modern classic was born.
Heat the peppers, and then serve alone or with a little olive oil. They are also good with fried eggs, or perhaps with some grilled morcilla black sausage. One of the favorite ways to serve them is stuffed with fish, crab or shrimp. The taste is more intense and more refined than that of the fleshier 'morrón' peppers. Each jar contains 8 to 12 whole peppers.
They come from a unique variety of red peppers grown in Lodosa and the surrounding Ribera countryside in Navarra. It is a region of gently rolling hills composed of fertile soil since the area is just north of the Ebro River. There are many vegetables grown there, along with a healthy amount of vineyards. Over the centuries the local people became particularly adept in the preservation of vegetables, such as asparagus and artichoke hearts (which we also carry at La Tienda.)
The way they preserve the peppers is unique. The peppers are a brilliant true blue red, triangular in shape, with a uniquely curved point - a Piquillo. The farmers pick them between late September and November each year and bring them to town via tractors with small wagons behind them. They are quickly sorted by size and ripeness, and the best ones are immediately scorched so that the outer skin is loose, and the inner flesh remains firm for easy peeling.

Romanico is the general brand for the oils produced on the Agroles Estate by the largest co-operative in the Les Garrigues region of Catalonia. Based in Borges Blanques, this estate serves 42 primary co-operatives with around 6000 families in total. The land here varies from the rolling hills of the lower valleys with vineyards and tidy olive groves to the steep-sided ridges higher up. Up there the olive trees grow in terraces and the countryside is much wilder in character. Some of the olive trees are as much as 150 years old. Others are very new, often planted between the rows of older trees after the installation of drip irrigation allowing for more intense cultivation. Arbequina is virtually the only variety planted here and it has a long history in the area. One of the Agroles' primary co-operatives is at Arbeca to the north east of Borges Blanques and the name of the town is thought to be associated both with the Moorish settlement and with the local olive variety. Indeed there is some speculation that this variety came originally from North Africa. Romanico Extra Virgin Olive Oil is produced near Arbeca, the most arid territory in Catalunya, Spain. Arbeca is the village in the region that gives the namesake to this variety of olive. Marzipan candy descends from a centuries' old tradition, the combination of almonds and sugar. The resulting 'dough' is quite pliable, and confectioners use this attribute to create whimsical figures before toasting them in an oven. The result is these marzipan 'figuritas'. There are about 12 per box. At the battle of Navas de Tolosa in the year 1212, it is said that the nuns of the San Clemente convent took care of the wounded soldiers. According to tradition, they ground up their stores of almonds in mortars and pestles, and then kneaded them together with sugar to create emergency rations. This type of bread (pan) produced with a pestle (maza) is supposed to have given rise to the name mazapán in Spanish - marzipan in English.

Traditionally, the orange rind on Mahon comes from being rubbed in butter, paprika and oil. When a cheese is aged, the taste intensifies and becomes bolder and nuttier. Typical Queso Mahon is aged in the caves of Menorca for two months. Reserva is aged for at least a year. It maintains a slightly briny, sharp taste, but now becomes hard and granular; on a par with parmesan. Reserva can be grated over pasta or served as a table cheese with olive oil, black pepper and tarragon. A robust Spanish red wine can be overwhelming to young Mahon, but the Reserva definitely has the strength for this pairing. If you can't get fresh churros, donuts are a perfect substitute.Amalia creates a piping hot cup of thick, creamy chocolate -- 'chocolate a la taza' -- just like the one you remember when you started your day in Spain. My wife points out that it is virtually fat free -- unlike our Valor 'chocolate a la taza' bar -- so with a little imagination you can justify a piping hot mug as part of your diet! Actually, I just like its soothing creamy taste.It is so easy to make. All you do is follow the directions on the packet: put about 2 or 3 tablespoons of Amalia per cup of milk in a saucepan and bring it to a boil.
