|
Product Description
Combining the features of a chef's knife and a cleaver, the Santoku is an all-purpose knife that's ideal for cutting meat, fish, and vegetables. The word "santoku" means three good things--a reference to the three cutting tasks it performs so well: slicing, dicing, and mincing. The kullens along the edge of the blade help to reduce friction, which prevents food from sticking. For proper balance, this 6-1/2-inch Santoku knife also features a sharp, stainless-steel full-tang blade that is stain-proof and hardened for strength. Oxo regularly wins design awards for its Good Grips utensils, which have black ergonomically correct rubber handles that are comfortable to use. The handle on the 6-1/2-inch Santoku knife also provides that familiar nonslip, pressure-absorbing feel, whether wet or dry. It's contoured to fit the hand snugly while providing a safe, secure grip. Measuring approximately 10-1/2 inches long, the Santoku knife carries a lifetime warranty and is dishwasher safe, but washing it by hand with warm, soapy water, and promptly drying is recommended.

Wüsthof Classic 7-Inch Hollow Edge Santoku Knife

- Japanese-style cook's knife designed for chopping, slicing, dicing
- Alternating hollows on blade's sides prevent food from clinging
- Blade, bolster, tang forged from single piece of high-carbon stainless steel
- Tough polypropylene handle with full tang and traditional three rivets
- Made in Germany
|
Product Description
Tough polypropylene handles with full, visible tangs and the traditional three rivets distinguish Classic knives from Wüsthof's other cutlery lines. Otherwise Classic knives are identical to other Wüsthof knives, embodying all the virtues that have earned the German manufacturer world renown. The principal parts of a Wüsthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. The blades and beautifully formed bolsters are not as thick as on some knives. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action. This 7-inch santoku is a Japanese cook's (or chef's) knife, featuring a low-tip style with a broad blade. The cutting edge is minimally curved, so it provides less rocking action than a European-style cook's knife. For straight-down slicing and precise chopping, however, it's superb. Alternating hollows on each side of the blade create air pockets, allowing slices to fall away cleanly. This knife should be hand washed. --Fred Brack
Product Description
Finely crafted, razor-sharp knives are an investment worth making. Especially when they're hand-forged in Germany by Wusthof's skilled craftsmen. Made of quality high-carbon stainless steel, this 7" Santuko knife is designed for sushi, sashimi, or anything else that needs to be sliced paper thin. Lifetime warranty.

- Made of single piece of high-carbon stainless steel; seamless, hygienic construction
- Wedge-shaped, ergonomic handle with slip-resistant grooves; co-designed with arthritic chefs
- Lightweight; easy-to-clean; lifetime warranty for manufacturing or materials defects
|
Product Description
In fewer than five years, Rachael Ray has radically changed the way America cooks dinner. Her perky-girl-next-door swagger, her catchphrases for techniques, and her dinner ideology of simpler, less expensive and just in time have sold billions of books and placed her at the top of the talent heap of food television personalities. The F??ri RR East/West Coppertail is two knives in one: a chef's knife shape for classic rocking and sawing action (for heavy professional work) and fine chopper shape for fast vertical chopping (for softer vegetables). It has unique scalloped edge and Coppertail handle. With no handle gaps or joins, there's nowhere for germs to hide, making F??ri Pro one of the easiest knives to keep clean.A solid copper plug is fused into the end of the handle for easy rebalancing, i.e. as the blade wears and becomes lighter over time, copper is filed from the tails to rebalance the knife. The handle wedges into the hand, requiring less 'squeeze' to perform repetitive cutting tasks, resulting in less fatigue and hand strain than conventional handles. F??ri Pro is durable because there are no wood, plastic, rivets or separate pieces that can deteriorate over time.

Shun Classic Cutlery Collection
By: Shun
Our price:
|
Product Description
At first glance, Shun Classic knives immediately stand out for their sleek black handles and ripple-patterned, Damascus-style blades. Intriguing as they look, the knives really impress when you start to cut--they are incredibly sharp, and seem to melt through everything from a soft tomato to a hard squash. Differing from top-quality German knives, which have a 22 degree angle, Japanese-made Shun knives are formed with an acute 16 degree angle that won't bend or waver due to the hardness of the VG-10 steel core used in their construction. Clad with 32 layers of high-carbon stainless steel (16 on each side), the blades resist rusting and maintain their razor edge for a considerable time. The Damascus ripples create tiny air pockets that help prevent food from sticking, resulting in uniformly thin slices. Made of a resin and hardwood fusion known as PakkaWood, the handles form a "D" or slight tear-drop profile with a single ridge that fits a right-handed user most comfortably. While dishwasher-safe, Shun knives should be carefully washed and dried by hand, then stored in a wooden block. Shun knives make exceptional gifts for the home chef, and are covered by a lifetime warranty.

Wasabi by Kershaw Cutlery Collection
By: Wasabi
Our price:
|
Product Description
Wasabi knives are styled in the traditional single-bevel design preferred by Japanese chefs. The broad half-inch bevel on just one side allows the knife to be sharpened on a whetstone to achieve the exact angle and sharpness needed for the uniform slices required in Japanese cuisine. Moreover, the back of each Wasabi blade features a long concave hollow that helps release food quickly, in the same manner as the multiple front hollows on a santoku knife. Adding to the traditional look are the bead-blasted surface of the blade (which is then stamped with both the English word "Wasabi" and the corresponding Japanese characters), and the bamboo-look handle, which for hygienic reasons today is made of polypropylene blended with pulverized bamboo. An antibacterial agent is added for good measure. Made in Japan of high-carbon stainless steel, the knives are dishwasher-safe but are best cared for when washed and dried by hand. Wasabi cutlery is covered by a limited lifetime warranty.

Product Description
This 5.5-in. Vegetable Knife has a unique blade shape that encourages the cook to perform a slicing motion. A great all purpose knife for those with small hands or those that feel more confident working with shorter blades. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.
Product Description
High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 5-1/2-inch knife for precisely slicing and chopping vegetables is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack

Product Description
The two most innovative features of Global knives are their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife. To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.

Shun Pro cutlery, which features a single bevel blade, can be easily maintained using this Whetstone. Made of a combination of ceramic grits???one side for refining and polishing, the other for basic honing???it works by removing dulled molecules that accumulate on the blade surface. A few strokes on each side are all that's required for continued use. The whetstone must be soaked before using and measures 2 3/8-inches wide, suitable for all knives, from a parer to a cleaver.Made in the ancient city of Seki, Japan, Shun Pro knives rely on extremely sharp 2.5mm blades, made of a single piece of Japanese VG10 steel for strength, called the Honyaki style in Japan. It offers precision slicing, cutting and chopping that is unprecedented by any of its German competitors. Sharper out of the box than other knives, Shun Pro knives feature a traditional Japanese blade, with a one-sided beveled edge and hollow-ground or concave back. Japanese chefs in particular prefer the single bevel because it can be honed backed to its original sharpness, even after hours of slicing, using a whetstone. In addition, the hollow ground divots on the back produce air pockets that remove friction when slicing, so food releases easily without any loss of flavor. The ebony Pakkawood handle, a highly durable combination of layers of white birch wood and resin, is designed in a ???D??? shape to fit firmly and comforta
