The 7-inch hand-honed blade on this knife features a modest curve near the bolster and a straight cutting edge. The blade is long, slim, and flexible and is ideal for filleting fish or chicken; the thin edge allows the meat's fibers to be cleanly separated, making quick work of even the toughest tuna.
