The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 23-quart pressure canner is more than adequate for any home canning needs. It's a professional-quality tool, made of heavy-duty aluminum, with stay-cool handles and a strong-lock steel lid. An accompanying rack fits down into the pot to keep jars up off the bottom, so that liquid can circulate underneath. And it can do double duty as a large pressure cooker. It's easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor. The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The pressure dial gauge gives an accurate reading so that pressure can be kept constant during canning. This pressure canner is also a cooker that's useful for weeknight dinners or for any meal that needs to come together quickly. Cooking a dinner-party roast, holiday turkey, or backyard-barbecue pork loin to precisely the proper temperature without fuss is a snap with this thermometer. You can even monitor two foods (beef and lamb, for instance) simultaneously, since two stainless-steel probes are included, each 6 inches long and each connected to a 39-inch stainless-steel wire. Here's how it works: program the tool (two AA batteries included) by selecting either "beef," "veal," "lamb," "pork," "chicken," or "turkey." Then program to rare, medium-rare, medium, or well-done. The monitor displays the proper temperature--which can be altered by pressing a button. Place the probe into, say, a turkey. Run the wire from the oven and close the door. (Door should remain closed until turkey is done so oven temperature doesn't vary.) Plug the wire into the monitor, and open the monitor's built-in stand. Set the clock to the current time. The resulting blast of heat from the Old Stone Oven rectangular pizza stone gives bread and pizza a nice chewy crust. The rustic French tarts called galettes are also well suited to a baking stone. To use the stone, place it in a cold oven and preheat to 500 degrees for pizza, or according to the recipe for bread or galettes. The stone is made of the same material that lines blast furnaces and kilns, so it can handle ultra-high temperatures. Wait until the baking stone is entirely cooled before attempting to clean it. Let it dry completely before using again. Some discoloration will occur over time; this is natural and will not affect baking. Using baking parchment may help delay that discoloration. Do not bake cookies, turnovers or other high-fat items on the stone; the stone would absorb the fat and proceed to produce smoke and bad odors.
